Summer Slow Cooker Meal: Balsamic Peach Chicken

Summer Slow Cooker Meal: Balsamic Peach Chicken

My slow cooker gets used year round. I love it during the summer so I can put a meal in and enjoy playing in the pool with the girls a bit longer and know that dinner will be ready for us when we are out. My entire family waits eagerly for peach season and it has barely just begun but we have already gone through a case of stone fruit as our after dinner dessert. This recipe for Balsamic Peach Chicken is great for a summer dish over zucchini noodles, rice or a salad like I did last night. This recipe can also be made in the InstantPot too.

Memorial Day- BBQ Meatball Sliders

Memorial Day weekend usually marks the start of summer, maybe not officially but traditionally. Thank goodness I live somewhere that is sunny and hot most of the year otherwise I would probably be a miserable mess. Rather than actually being a couch potato, I’m meal prepping twice baked potatoes to stock my freezer. So on a crazy night filled with activities and Holiday to do’s I can quickly pull the potatoes out, pop in the oven for 20 minutes and have dinner ready to go. My ABC30 segment is also linked if you prefer to watch the video but are never up at 6:10am to catch in on air. My outfit details are also listed. Have a great weekend friends!
