Hosting a ladies luncheon can be intimidating, especially when it is a large group of ladies. I recently prepped lunch for Fresno's La Feliz Guild, an organization that raises funds for Valley Children's Hospital. Our big Derby Down event is less than a month away so everyone is in full prep mode. The lunch meeting was held at the beautiful home of one of my dearest friends, her kitchen created the perfect scene to present the food in. One Potato, Two Potato, Couch Potato- An easy dinner or side dish

This gloomy weather makes me want to be a couch potato and I am dreading turning back the clocks. Thank goodness I live somewhere that is sunny and hot most of the year otherwise I would probably be a miserable mess. Rather than actually being a couch potato, I’m meal prepping twice baked potatoes to stock my freezer. So on a crazy night filled with activities and Holiday to do’s I can quickly pull the potatoes out, pop in the oven for 20 minutes and have dinner ready to go.
