Do you ever have those nights where you do not know what to prepare for dinner but do know that you want something warm, tasty, & somewhat healthy? Today's recipe will help solve that problem. I am speaking from experience. One Monday morning I was exhausted from a weekend in the kitchen teaching, cooking, cleaning, & entertaining. I was supposed to have lunch ready for a playdate later that day but did not have the energy to plan another meal nor make it to the store. My gracious neighbor saved the day. She ran next door to get a few ingredients and was back in a flash, making this delicious flat bread pizza that was a huge hit with the moms, kids, & toddlers at the playdate.
This recipe is great because it's made with ingredients that you might have on hand, or leftover from making a pesto pasta or fettuccine Alfredo. You can also play with the flavors and use a BBQ sauce to create a BBQ chicken pizza. You can get really crazy and make a few different flavors and serve up pizza tapas style for dinner.
7 oz pesto
10oz Alfredo sauce
2 chicken grilled breasts, shredded
4oz sliced mushrooms
8oz shredded cheese
4 pita bread rounds
In a medium bowl mix together pesto and Alfredo sauce in a 2:1 ratio. Place 2 pita rounds on a lined cookie sheet. Using the back of a spoon, spread sauce to cover entire pita, spreading to the edge.
Next, layer on shredded chicken, sliced mushrooms and cover in shredded cheese.
Repeat with remaining pita breads. Bake at 450 degrees for 12 minutes or until cheese is golden brown.
