I am very lucky to live in the Central Valley where we can celebrate seasonal fruits and veggies year round. Driving home from a meeting this week I heard a radio ad for a Pistachio Party and immediately thought that's my kind of party- I guess that's a sign you are no longer in your 20's.
Pistachios are not only a tasty treat but have many beneficial health qualities too. Pistachios contain protein and fiber and a healthy fat that has been linked to helping with weight management and improved blood pressure. The fact that you have to shell them when you eat them helps to control overeating as it allows time for you tummy to signal to your brain that you are full.
With the first official day of Fall this week, I wanted to make a recipe that will be easy to put together when you friends and family gather this Season. Since we are in the tailed of Grape Season I thought it would be nice to pair Pistachios and Grapes for our first appetizer.
You will only need 3 ingredients- Large Green Grapes, Soft Goat Cheese, & crushed Pistachios. To begin, take 2 teaspoons of goat cheese in the palm of your hand and flatten it out. Place a washed and dried grape in the center and begin to form a ball around the grape. Roll in your palm until a ball forms. Once the grape is covered, roll the cheese ball in the crushed pistachios. Arrange on a serving platter. Chill for 30 minutes prior to serving and enjoy! This recipe is very simple but looks and tastes decadent. Serve with toothpicks to make it easy for guests to eat.
Pistachio & Grape Appetizer
- 30 Green Grapes- washed and dried
- 10 oz soft Goat Cheese
- 2 Cups Pistachios, Chopped
Take approximately 2 tsp mound of Goat Cheese in the palm of your hands. Begin to wrap the cheese around the grape until a ball forms. Roll the cheese in crushed Pistachios and display on serving platter. Chill for at least 30 minutes prior to serving.
The next recipe also highlights seasonal fruit... nice, crisp, green Pears. When I studied abroad in Italy I loved eating Pear and Pecorino sandwiches- partly in which I can thank for bringing home Italy on my thighs. For this appetizer I thought let's cut out the bread and use the pear as the cracker. I sliced Pecorino in 1 inch triangles and layered it on with a drizzle of honey and sprinkle of dried Cranberries and crushed Pistachios for a nice crunch. I shared 1 with the camera man but gobbled them all up within 10 minutes of finishing the segment. Breakfast of Champions!
Seriously, this appetizer will be a hit at your next gathering. Keep cold and serve immediately.
Oh, a tip I forgot to mention on air!! If you coat the cut pears in Lemon or Orange juice is will prevent the pears from turning brown before you serve them. Also a plus as no one likes to eat browned fruit.
Pear & Pistachio Appetizer
- 2 Green Pears, washed & dried
- 4 oz Pecorino Cheese Block, Sliced into 1inch triangles
- 1/2 cup Pistachios Chopped
- 1/2 cup Dried Cranberries
- Lemon or Orange Juice (not mentioned on air)
Core & slice pears. Coat sliced pears in lemon Juice to prevent from turning brown.
Arrange pear slices on serving platter(s), layer on sliced Cheese, Drizzle with Honey and sprinkle on dried Cranberries and crushed Pistachios. Serve cold & immediately.
