I wait all year for this delicious stone fruit to harvest and when the time comes eat more Peaches than 1 person should. They are just so tasty, I love biting into a perfectly juicy peach!
I love Peach cobblers because they are rather simple to throw together and pretty much impossible to mess up but rather than make another cobbler I wanted to share a fun Summer recipe that are great for lazy days where you want to still impress with a elegant treat but do not want the fuss.
This simple Summer Peach Tart requires 4 ingredients. While it is fun to make doughs and pastries it is a huge time saver to be able to pick up a box of pre-made pastry from the grocery store and create a "homemade dessert."
To prepare this recipe, plan ahead a little to let the Pastry dough thaw. Leave it in the fridge over night or place it on the counter to thaw within a few hours. Frozen doughs are impossible to work with. Whenever I use Honey, I try to use local honey. There is a gentleman that sits on the corner of a street near my neighborhood who sells delicious honey. There are several benefits to using Local honey and the biggest for me is the ability to fight off seasonal allergies and to me that's a WIN!
Summer Peach Tart
3 cups sliced Peaches
3 TB Honey
1 TB Lemon Juice
1 Pastry Sheet
1 egg, lightly beaten
1. Preheat the oven to 375 with your baking sheet or Pizza stone inside.
2. On parchment paper roll out Pastry dough. Roll in each edge towards the center, about an inch to make a border.
3. In a separate bowl, toss Peaches with honey and lemon juice.
4. Place dough on heated baking sheet, fill with the peach mixture. Brush the edges lightly with egg and sprinkle on sugar if desired.
5. Bake for 20-25 minutes until golden brown.
Let cool for a few minutes and serve with Vanilla Ice Cream.
I crave smoothies year round but if you are not crazy like me- Summer is a great time to enjoy smoothies. My husband and I make green smoothies in the morning for a boost of vitamins, minerals, and green goodness to get our day going but once and a while I like to make more indulgent smoothies for a snack or dessert.
This recipe is still relatively healthy but does have a higher sugar content since both Peaches and Pineapples are sweet sweet sweet. I used Almond milk for extra protein, you can use any milk that you would like.
Peaches are a great ingredient to put in your green smoothies because they are so sweet they mask the flavor of the greens. So if you are trying to develop a green smoothie habit, try adding some frozen peaches or pineapple to your blend.

Peach Pick Me Up Smoothie
3 cups Frozen Wawona Peaches
1 Cup Almond Milk
1 cup pineapple slices in juice
Blend all ingredients until smooth.
