BBQ Meatball Sliders

Summer time screams for Backyard BBQs & gatherings of friends & families. Sometimes, if you live in Fresno, it is too hot to head outdoors to stand over a piece of metal filled with fire. When the summer heat is too much to bare put your oven to use and prepare these delicious BBQ Meat ball Sliders. They are also great to prepare the day before your get together so you have more time to spend with guests during your event.

I can't stress how easy these are to make but not only are they easy they are a BIG crowd pleaser! To top it off they are surprisingly filling so the hubby was happy after dinner. To me, presentation is important. I loved finding news ways to serve basic foods- I cut corn in half and poked them onto skewers & displayed in the Kraft planter box filled with a foam rectangle, then covered it in plastic grass. Easy & fun complement to the dish... But let's get back to the Sliders...

Gather all your ingredients:

For the Meatballs:
1 lb Ground Beef
1/2 cup shredded Cheddar Cheese
1/2 cup Breadcrumbs
1 egg
1-2 Tb Mayo
1/2 tsp Garlic Salt
1/2 tsp Paprika

For the Sliders:
1 Pack King's Hawaiian Sweet Rolls 
4 slices Cheddar Cheese
4 Slices Bacon
1 yellow onion, diced
Your Favorite BBQ Sauce- I use Sweet Baby Ray's


Preheat Oven to 375 degrees.

1. Combine all ingredients in a large mixing bowl until evenly mixed. Form 1.5-2 inch Meatballs. Place in a Baking dish- Bake for 20-25 minutes. (To prep in advance, store raw meatballs sealed in the fridge overnight & prepare before your gathering)

2. Place Bacon slices on a cooling rack over a  lined Cookie Sheet and bake for 15 minutes. Remove, let cool, and chop.

3. Sauté diced Onion until translucent and lightly browned.

4. Using a serrated knife, keep the sweet rolls connected and cut in half.

 Making Sliders:

Start on a lined cookie sheet, with the bottom of the bread, layer 1 meatball on each roll, cover in BBQ sauce. Place the cheese slices across the top, add the onions & bacon. Place in oven and Broil for 3 minutes (or until cheese is melted). Place the bun lids in for 3 minutes.

Remove, add the lids & toothpicks, slice at perforated lines and serve!
