Carne Asada Wrapped Jalapeño Poppers

With Father's Day weekend approaching, I went in search of a perfect dish to serve to the men in my life… It also happens to be the 1st weekend of the World Cup so I wanted to make a party friendly dish that everyone can snack on while watching the game.

We have all had Jalapeño poppers, and possibly even Bacon wrapped Poppers, but I thought, why not take this and make it an even manlier dish... Let's add Steak!

First, I created a marinade that has a little hint of sweetness to it. It is important to let the Carne Asada marinate for at least 20 minutes to help tenderize the meat. If you have the time, let it marinate in the fridge overnight.

For the Marinade:

1/4 cup Red Wine Vinegar
1/4 cup Water
1/4 cup Orange Juice
1 Tb Olive Oil
1 Tb Lemon Juice
1 Tb Minced Garlic
1/2 tsp Cumin
1/2 tsp Chili Powder 
1/4 cup Chopped fresh Cilantro
Salt & Pepper to Taste 
1 TB Brown Sugar 
1. lb Carne Asada

Mix all ingredients in a large Baking dish, add the meat and cover all meat surface. Cover dish with plastic wrap and store in the fridge to Marinate for 20 minutes or overnight.

Let's move on to the Jalapeños! These little suckers can BURN! I like to wear gloves when handling them and always have the kids wear gloves when working with Jalapeños.

First cut off the top and discard. Then cut the Pepper in 1/2 length wise. Using a pairing knife, cut out all membrane and seeds (this is the HOT part!). Discard. Soak the peppers in a bowl of water to get rid of any remaining seeds that may be hiding. Dry the peppers and now they are ready! I used 5 Jalapeño Peppers.

The Cheesy filling is what adds that extra touch of gooey goodness. Since I made a sweeter marinade, I wanted the filling to have just a little kick. My husband adds Sriracha wherever he can so I thought it would be an appropriate addition.

For the Filling:

4 oz Cream Cheese, Softened

1/2 cup Shredded Cheddar

3 slices Bacon, cooked & chopped

2 tsp Sriracha

Combine all ingredients until well incorporated. Using a Spoon, fill each Pepper half with the filling.

Using the back of a spoon, press the filling into each pepper half.

Wrap a piece of Carne Asade around the Pepper making sure the ends are tucked underneath the pepper so that the seam is on the bottom. Place them on a lined cookie sheet. Set Oven to Broil & place on the top rack of the Oven for 4-5minutes until the meat is cooked. Serve immediately. Enjoy!

I seriously could not stop eating my test samples. These are delicious and will make any guest but especially your Dad happy this weekend! Enjoy!

Carne Asada Marinade:
1/4 cup Red Wine Vinegar

Ingredients:

5 Jalapeno Peppers

4 oz Cream Cheese, softened

1/2 cup Shredded Cheddar Cheese

3 slices Bacon

2 tsp Sriracha

1 lb marinated Carne Asada


Directions:

1. Marinade Carne Asada for 20min up to 24 hours in the refrigerator.

2. Prepare Bacon- Lay slices on baking sheet & place in oven for 15 minutes at 375 degrees. Remove, cool, & chop.

3. Wearing gloves, slice the tops off of Jalapenos and cut in half, remove all seeds and membranes. Soak jalapenos in bowl of water and dry.

4. Prepare filling: Combine cream cheese, shredded cheese, bacon, and Sriracha until well blended.

5. Using a spoon, fill the pepper halves with the cheese mixture.

6. Wrap meat around the filled pepper placing the seam underneath the pepper. Place on a lined cookie sheet and place in the oven set to Broil for 4-5minutes or until meat is cooked and cheese is browned.
