Shepherd's Pie, is a traditional dish, but I put a spin on it by baking it in a cupcake pan lined with Refrigerated Biscuits to make delicious bite sized servings that are great for individual servings or as a finger food for your party.
The meat in Shepherd's Pie is ground lamb, since Shepherd's tend to lambs, however you can use ground beef and it will still be Tasty! A meat pie made with beef is technically Cottage Pie (but shh, we won't tell). The crust is made out of Mashed Potatoes. A great dish for the "Meat and potatoes" guy in your life,
The great thing about this recipe is that you can add in as many veggies as you like and the Little One's will love it! My little Chef gobbled them up.
To begin: Peel potatoes and cut into 1/2 in cubes. Place in medium saucepan and cover with water- bring to a boil over high heat. Once boiling, decrease the heat and simmer for 10-15 or until tender to the fork. Drain the potatoes and add in Cream, butter, S & P- Mash until smooth. Fold in the cheese and set aside.
Next, Preheat the oven to 375 degrees.
While the Potatoes are cooking, prepare the filling. With 2 Tb of Olive saute the Onion for approximately 4 minutes, add in the garlic for 2 minutes. Add the Lamb, S&P and cooked until browned throughout. Sprinkle the meat with flour and stir until mixed in. Add in the tomato paste and Worcestershire sauce, stir until combined. Add in the Chicken Broth and bring to a boil, once boiling reduce the heat allow to simmer for approx. 10-12 minutes until thickened slightly. Remove from heat (add peas and carrots if desired).
Cut each biscuit in 1/2 horizontally and press 1 biscuit into the bottom of a prepared Cupcake Pan. Fill with the Lamb mixture. Spread the potato over the lamb (or beef) and press down lightly.
Bake at 375 for 18-20 minutes until golden brown. Garnish with Crushed Potato Chips or sliced green onions.
Let cool for a few minutes and serve!
