It all started with a cowboy hat to celebrate the Rodeo coming to town… As a parent we learn lessons from our kiddos all the time. This past week my daughter’s simple actions reminded how kids inherently have no inhibitions and how we can gain so much wisdom from their innocence. Because the Rodeo came to town, and even though we missed it, we are celebrating in our kitchen with Cowboy Loaded Sweet Potato Fries. Check out the recipe, video from ABC30, and a little story.
Thanksgiving break week is coming to an end. We had a fun filled week and really enjoyed every minute. I went AWOL on social media in an attempt to really cherish every moment with both girls at home. We cooked up a few recipes I wanted to share. If you still have leftover Turkey, definitely try out our leftover Enchiladas this week.
One week into the time change and I miss the longer days but rather than sit here and complain I am embracing the change in season (and light) by enjoying comforting, warm, fall foods. Soup is always my go to choice this time of year. This pumpkin soup is especially tasty. My hubby does not like, actually hates green beans. It has been a long goal of mine to make green bean dishes that he will eat. Last week the hubby and I both couldn't seem to catch a breath so a weekend away, alone together, was just what the doctor ordered. This gloomy weather makes me want to be a couch potato and I am dreading turning back the clocks. Thank goodness I live somewhere that is sunny and hot most of the year otherwise I would probably be a miserable mess. Rather than actually being a couch potato, I’m meal prepping twice baked potatoes to stock my freezer. So on a crazy night filled with activities and Holiday to do’s I can quickly pull the potatoes out, pop in the oven for 20 minutes and have dinner ready to go. I love Mondays because it is a fresh start. It is the day to kick off the week with the best foot forward and set the pace for the days that follow. Mondays tend to be my day off to just be a mommy. So today I am sharing a few simple activities (that I learned from the Europeans) that I am doing to slow down and show up.
We are nuts for Pistachios at our house. They make a great salty, crunchy snack but they are also great to cook with. We are excited for the Old Town Clovis Farmer's Market Pistachio Party this week. So today the girls are sharing how to make a delicious Pistachio Pesto Pasta that looks fancy but is rather simple to throw together.
