I am finally getting into a routine and excited to share the most recent Mom Meal Monday collab with my friend Alex of KLSD. Happy 2nd Monday of the month friend. You know what that means, Monday Mom Meals with KLSD! It is also the first day of school for many Central Valley kiddos. This One Dish Salmon Meal is great for busy nights on the go. It takes 7 minutes to prepare, throw it in the oven for about 15 minutes, giving you time to clean and reset the kitchen, and dinner is done. Easy peasy lemon squeezy. My slow cooker gets used year round. I love it during the summer so I can put a meal in and enjoy playing in the pool with the girls a bit longer and know that dinner will be ready for us when we are out. My entire family waits eagerly for peach season and it has barely just begun but we have already gone through a case of stone fruit as our after dinner dessert. This recipe for Balsamic Peach Chicken is great for a summer dish over zucchini noodles, rice or a salad like I did last night. This recipe can also be made in the InstantPot too.
Memorial Day weekend usually marks the start of summer, maybe not officially but traditionally. This year, here in the Central Valley it is rainy and cold so we will be celebrating Memorial Day indoors. This calls for an indoor celebration.
